Star Chefs Maki Champion

Came for the Shinkansen Maki Set, a super long train with 12 pieces and 12 different flavors.



Star Chefs Maki Champion, the second branch after The Nine Rama 9, is helmed by Michelin-starred chef Yasuji Morizumi, winner of the TV Champion show from Japan. This restaurant is a unique fusion Japanese eatery, with its signature dish being Maki, or seaweed-wrapped rice, which blends the essence of Eastern and Western cuisine. The chef's specially crafted sauces further enhance the dining experience.

The menu here mainly consists of salads, served in both bowl and maki forms. There is also Wasabi Mamaki, a Japanese-style salad with various fish and crab sticks. The highlight of the restaurant is the Star Chefs Maki group, which offers a wide variety of options. If you don't feel like having maki, you can choose from the Curryaki section, which features various rice dishes with curry toppings, including pork, beef, and shrimp. Alternatively, you can opt for the Star Chef Don rice dishes, such as tempura shrimp, soft-shell crab, tuna, salmon, wagyu beef, or even eel rice. The sashimi selection here is limited to just three options: salmon, tuna, and crab sticks. Finally, the savory menu concludes with the Tempura section, offering four choices: shrimp, silver fish, crab stick, and soft-shell crab tempura. To top it off, there are drinks such as sake, other alcoholic beverages, soft drinks, and desserts.


The first must-try menu item at this restaurant is the Shinkansen Maki Set (480 baht). The restaurant only makes 12 sets per day, with 6 sets served between 12:00-14:00 and another 6 sets served between 18:00-22:00. This set includes 12 pieces of maki, each with a different and unique flavor. Let's start with the first piece...


1. Shuburi Tuna is a tuna maki topped with a sweet and sour mango sauce, giving it a delightful crunch. The sauce adds a touch of sweetness that makes it delicious from the first bite.


2. Ugani Matcha is a maki roll filled with eel, rolled in green tea, topped with mayonnaise and sprinkled with a little more mango stone. I've never had a maki roll rolled in green tea before. This one has a very strong green tea smell. I didn't even know there was eel in it.


3. Double Ocean is a maki roll filled with tuna, sweet egg, and imitation crab, rolled in dried bonito flakes. The star of this piece is the aroma of the dried bonito flakes, which is very prominent.


4. Crispy Salmon: This dish features fresh salmon mixed with shrimp roe and tempura flakes, creating a delightful crunch with every bite. The spicy sauce adds a subtle kick, making for a flavorful and satisfying experience.


5. Spider Curry is a maki roll filled with soft-shell crab, drizzled with curry sauce. The sauce itself is not as thick and strong as the curry rice sauce, but it has a light aroma that is noticeable.


6. Ebi Lava is a maki topped with shrimp, drizzled with spicy shrimp roe sauce, and fried lotus root.


7. Sesame Unagi is a maki roll filled with eel, topped with more eel, and drizzled with fragrant sesame sauce. It is then sprinkled with white and black sesame seeds. This is the most delicious for me.


8. Salmon Miso is a maki roll filled with spinach and topped with salmon that has been lightly seared and drizzled with miso sauce. This bite was also delicious, with a fragrant and smooth texture.


9. Ebi Crunchy is a maki with tempura shrimp dipped in the head. It's crispy and delicious. Drizzle with a little spicy sauce.



10. The origin is like a California maki in general, mixed with shrimp eggs.


11. Ribs 'N' Roll is a maki roll filled with grilled pork ribs, topped with sliced almonds and pineapple. The taste of BBQ sauce is all over the place.


12. All Stars is a shrimp-stuffed maki with four different sauces: spicy sauce, curry sauce, mirin miso sauce, and shrimp sauce. It's then lightly torched. It's the last dish of the course and it ends it on a high note.


After a long Shinkansen menu, let's start with a salad menu. It's Salmon Salad Maki (180 baht), which is salmon rolled with organic salad vegetables and topped with a clear sesame dressing. This menu is considered light and healthy. This sesame dressing is also delicious.


The next menu is Sesame Ugani (4 pieces for 260 baht, 8 pieces for 480 baht). I chose the 4-piece option. This menu is actually also available on the Shinkansen Maki set, but I wasn't satisfied enough, so I ordered another 4 pieces. The filling is grilled eel topped with another piece of eel. The eel is already fragrant, and the Japanese sesame sauce enhances the flavor even more.

Salmon Miso This menu is free from taking a picture with Stady in front of the shop and posting it on IG with the hashtag #starchefsmakichampion. I've been hooked on this menu since the Shinkansen Maki menu. It's really delicious.


Let's take a break from maki and try the Salmon Tataki (180 baht) for a change of pace. It's a salmon salad with a wasabi sauce mixed with Thai-style dipping sauce. It tastes like Thai-style salmon salad or salmon marinated in fish sauce. You can also faintly smell the wasabi in each bite. It's fresh, delicious, and a great way to cleanse your palate.


Let's continue with another maki menu, Double Ocean (4 pieces 160 baht, 8 pieces 300 baht), which is another menu in the Shinkansen Maki series. It's a tuna maki roll, mixed with dried bonito flakes, topped with Japanese sauce.


To end the savory part of this meal, we have Ribs 'N' Roll (4 pieces for 170 baht, 8 pieces for 320 baht), another menu in the procession. The filling is grilled pork ribs, topped with grilled pineapple and BBQ sauce. I was hoping to get a lot of the smell of ribs from this menu, but it was completely covered by the BBQ sauce. But at least there are my favorite sliced almonds.


The final dish was the Hokkaido Light Cheese Sakura Maki (85 baht), a maki roll filled with cream cheese and coated with Sakura Cheese, topped with strawberry sauce. This dish is served cold, and the cream cheese in the center is cool, almost like ice cream. At first, I thought it was ice cream, but even after leaving it out for a while, it didn't melt. The taste is not overly sweet, but rather cool and light, with a slightly sour note.


This price is at Terminal21, 4th floor, behind Farm Design. It might be a bit hidden. The shop does not have a 10% service charge, only 7% VAT.
