Setting Off Northward: A Culinary Adventure Awaits
Our journey northward began at the crack of dawn. Our driver, a seasoned traveler, assured us not to worry about breakfast, promising a special noodle stop along the way. While we questioned the need for a detour when countless noodle shops dotted our path, she insisted that this particular eatery was a must-try, a hidden gem for those passing through. And so, with anticipation building, we embarked on our culinary adventure.
The car stopped briefly at a roadside stall on the Asian Highway in Bang Plam Ma, before reaching the entrance to Sam Chuk Market. Without waiting for everyone to gather at the table, they ordered a large amount of food. (Didn't they say they weren't hungry?)
This restaurant, named "Nai Tao Boat Noodles with Pork," boasts the tagline "Ancient Recipe Since 1947." With no branches, it's clear that this establishment has been serving up its time-honored dishes for decades. The restaurant's claim of an ancient recipe rings true, as the inclusion of dried shrimp in their noodles is a testament to a culinary tradition rarely encountered today.
The broth boasts a well-balanced flavor, with dried shrimp imparting a sweet and salty note that enhances the overall taste. The light and refreshing broth is a delight to sip. The pork slices are thick but not overly so, striking a perfect balance. The generous amount of toppings is commendable. Regrettably, we did not order the "bamee" noodles on this visit, as we later learned that they are thick, flat noodles. Nonetheless, the dishes we ordered were exceptionally delicious.

This dish, "Sen Lek Nam Tom Yum," is a variation of the classic Tom Yum soup, but with thin rice noodles instead of thicker ones. The broth is based on a lime-infused recipe, with the addition of fresh lime juice for a tangy and aromatic flavor.
Same great machine.
After devouring two bowls each, they were full and ready to continue their journey.
