I was invited to try the pizza at Scoozi Pizza in Paseo Ladkrabang. I had to cross the river from my office to Ladkrabang to get to Paseo. Paseo is a large mall with many shops and restaurants, including Scoozi Pizza, an Italian restaurant.

Scoozi Pizza: A Refined Dining Experience

Scoozi Pizza boasts a sleek and sophisticated ambiance, devoid of clutter and exuding a tasteful simplicity. The spacious interior, adorned with neutral-toned furniture, creates an airy and comfortable atmosphere. An open kitchen, separated by a clear glass partition, allows patrons to witness the culinary artistry and pizza-making process firsthand. The efficient ventilation system effectively eliminates cooking odors, ensuring an undisturbed dining experience. The only aroma that might tempt your appetite is the tantalizing fragrance of the freshly prepared dishes.

Mr. Ivan Barone, Corporate Chef, an Italian chef, and Mr. Topsyn Kladjarerm, Executive Sous Chef, a Thai chef who has been working as a chef abroad for many years, came out to introduce themselves and welcome us, the visiting gourmets.

In addition to treating us to pizza, the chef will also demonstrate authentic Italian cooking techniques for us to observe up close. We began with a tour of the kitchen, which is an open kitchen of modest size. The storage of ingredients, equipment, and condiments is therefore orderly, tidy, and exceptionally clean (unlike our kitchens at home, which I won't even begin to describe).

Various ingredients were meticulously arranged in preparation for the first dish to be demonstrated by the chef, the Parma Ham Pizza, crafted by Chef Mr. Ivan Barone.

While Chef Mr. Ivan Barone was demonstrating the cooking process, Chef Topsyn, who we will simply call Chef Top, discussed the concept of Scoozi Pizza. He explained that they had acquired the business from the previous owner and had renovated all 18 branches, including the trademark, store name format, and interior design, to make the restaurant more accessible to consumers.

By positioning its customer base in the middle range, the restaurant has adjusted its prices to make it more accessible. However, this does not mean that the quality of the ingredients has been compromised. Italian cuisine emphasizes the freshness of its ingredients, especially those that need to be imported from abroad.

The restaurant also adapts its flavors to suit Thai tastes by incorporating flavors from certain pizza toppings or creating new pizza toppings that cater to Thai preferences, such as the "Moo Laab" pizza. However, it still retains authentic Italian dishes for those who prefer traditional Italian cuisine, such as Italian sausages.

In addition to the signature pizzas and spaghetti, Scoozi Pizza also offers a wide variety of other European and Italian dishes, including various steaks and soups.

Chef Ivan's pizza dough is unlike any other. It's not thick and fluffy, nor is it thin and crispy. Instead, it's a unique combination of both: thin and soft. The crust is crispy on the outside and chewy on the inside, making for a delightful eating experience. No matter the topping, it pairs perfectly with the dough, making it the signature element of Scoozi Pizza.

The next menu that the chef said was simple but not easy to make well was spaghetti carbonara. We also thought it was easy because we had made it before, but when we saw the chef make it, it was not easy at all. The chef had many tips to show us. Starting with separating the egg yolks from the egg whites, mixing cheese and cream cheese, and simmering it in hot water without direct heat because it would spoil the color and smell. Once it was simmered, the chef quickly stir-fried it with spaghetti that had been boiled at the right time and temperature, and bacon that had been fried until it was crispy and fragrant.

The sauce is then ladled onto a plate, garnished with oregano and thyme, creating a rich and creamy spaghetti sauce that perfectly coats the chef's expertly tossed spaghetti. The result is a sweet and savory flavor that is truly delicious.

A Sweet Ending: Tiramisu Delights

The meal culminates in a delectable dessert, the tiramisu. While it may appear daunting, the chef simplifies the process. They utilize cheese-infused pancake batter, dipped in chilled coffee. Separated egg yolks and whites are then whipped with cheese and sugar until stiff peaks form. The yolks are gently folded into the whipped egg whites, creating a creamy mixture. This mixture is then layered onto the pancake batter and dusted with cocoa powder. A final flourish of mint leaves completes this delightful treat.

Refreshing and Healthy Beverages: Honey Lime Soda and Raspberry Italian Soda

In addition to its delectable food, Scoozi Pizza also boasts an impressive selection of beverages. Their menu features a variety of fruit juices, including the signature Honey Lime Soda and Raspberry Italian Soda, which offer a refreshing and flavorful experience. For those who prefer non-carbonated options, the Mulberry Juice is an excellent choice.

The menu is arranged in order, starting with Lobster Soup, which is fragrant and served with a crispy French baguette. Tear it off and dip it in the hot soup, it's delicious. The smell of lobster fills your mouth. The shrimp floating on the soup are really firm and fresh.

Caesar Salad

Followed by Caesar salad, Chef Ivan's signature salad dressing served with crispy bacon slices, fresh, crisp vegetables, and a smooth-tasting salad dressing. The crunchy croutons sprinkled on top make it a fun dish to eat. The salad dressing is tangy, the bacon is sweet and fragrant, and the vegetables are crisp.

This is our signature Italian sausage, served with creamy mashed potatoes that are truly smooth and buttery. The sausage itself is packed with finely ground meat, blended with Italian spices, perfect for those who crave authentic flavors.

Spinach and Cheese Gratin

This dish is a universal menu item that every pizzeria must have: spinach and cheese bake. What makes it so good is that it's baked fresh, so the aroma of melted cheese wafts through the air. The sweetness and creaminess of the cheese and the freshness of the spinach leaves blend perfectly. It's not soggy, hard, or crumbly, thanks to the high-quality cheese that holds everything together.

This is a demonstration dish. As you can see, even after a while, the dough has not collapsed and is not hard, but has a crispy texture. The acidity of the tomato sauce, which is meticulously prepared here, comes from the use of small, sun-dried tomatoes that are ground into a smooth paste and mixed with cheese before being baked until the cheese melts and the dough is crispy. It is then garnished with spinach, cheese, and Parma ham. The combination of flavors is excellent. The Parma ham is fresh and not too salty, which contrasts well with the acidity of the tomato sauce. It is a delightful and crunchy dish with fresh vegetables.

This menu item offers two options: regular and extra cheese for cheese lovers. It features a thin, soft crust generously coated with the restaurant's special sauce and topped with perfectly sized pepperoni slices. The combination of the crunchy crust, the sweet and savory flavors of the cheese, and the pepperoni is truly delightful. Personally, I prefer the extra cheese option because it offers a gooey, stretchy texture and a more intense cheese flavor.

Margarita Pizza

Although it is a basic pizza that every restaurant must have, this restaurant makes Magarita Pizza differently. Even though it uses only four basic ingredients: flour, tomato sauce, cheese, and basil, the Magarita Pizza here offers a crispy, sweet, and smooth taste.

The Margherita Pizza is named after Queen Margherita of Savoy, who visited a small town in Italy. The townspeople made a pizza for her using the three colors of the Italian flag: red, white, and green. The red color comes from the tomato sauce, the white from the mozzarella cheese, and the green from the basil leaves. The pizza was then named after the queen, Margherita Pizza.

Four Cheese Pizza Drizzled with sweet and fragrant honey

The Four Cheese Pizza boasts a simpler ingredient list than the Margherita Pizza. It requires only pizza dough and four types of cheese: gouda, mozzarella, cheddar, and Parmesan cheese, in equal proportions. However, some recipes may deviate by adding other types of cheese (which would render it not a "Four Cheese" pizza) or by adjusting the proportions of the different cheeses according to preference.

The Four Cheese Pizza here not only features four types of cheese, but also adds a touch of fun and excitement to your dining experience with a drizzle of honey. Yes, you read that right, honey drizzled on top! It may sound unusual, but once you take a bite, the sweet and fragrant honey enhances the already rich and creamy cheese, creating an even more delightful flavor. Combined with the crispy, chewy texture of the crust, it elevates the pizza experience to a whole new level. So, if you're looking for a unique and delicious pizza, be sure to order the Four Cheese Pizza with honey at this restaurant. You won't regret it!


Laab Moo Pizza: A Thai-Style Pizza

The only Thai-style pizza available here is Laab Moo Pizza. The pizza dough remains crispy and delicious, but unfortunately, the amount of roasted rice used is insufficient to fully capture the aroma and flavor of Laab Moo. This is likely due to the restaurant's desire to cater to Italian food preferences and make the pizza easier to eat. While the addition of Lao coriander and shallots helps to enhance the Laab Moo flavor, the overall experience is somewhat disappointing.

The star of the show, the Seafood Pizza, features a medley of fresh seafood ingredients sautéed in white wine to enhance their natural flavors. Chef Ivan's meticulous approach ensures that each ingredient, from the plump New Zealand mussels to the springy white squid, contributes its unique essence to the dish. The pizza is adorned with large tiger prawns and a vibrant bouquet of fresh peppercorns, creating a visually stunning and flavorful masterpiece.

The pizza's flavor profile is characterized by a subtle acidity from the tomato sauce and white wine, which effectively balances the seafood's inherent savoriness. The freshness of the ingredients is paramount, as any deviation could render the pizza unpalatable due to the seafood's strong flavor.

The meal concludes with a delightful dessert by Chef Ivan: tiramisu. The smooth, creamy texture contrasts beautifully with the rich, slightly bitter notes of the coffee-soaked cheesecake. The flavors are perfectly balanced, creating an unforgettable culinary experience. This dish was so delicious that it almost prompted requests for seconds.

After the food was served, we sat around and ate while chatting. But wow, I must say, as soon as the chef took off his uniform, I wanted to invite him to join us for Songkran. We enjoyed the delicious food, but we didn't forget to take a group photo as a souvenir.
